  • This is a full-time, on-site role located in Nairobi County, Kenya. As an Executive Pastry Chef, you will oversee the daily operations of the pastry kitchen, create new and innovative pastry items, and ensure the highest quality in food preparation and presentation. You will also manage and train pastry staff, maintain inventory, and ensure compliance with health and safety regulations. The role requires strong leadership, creativity, and a commitment to excellence in all aspects of luxury pastry and dessert creation.

Key Responsibilities

  • Supervise and lead all the pastry operations within the establishment. 
  • Develop and improve recipes, pastries, and desserts that challenge the market and emerging trends. 
  • Manage inventory and meet the set food cost. 
  • Train, review performance levels, and offer the required support to all pastry staff. 
  • Organize the pastry section rotas and cleaning schedules. 
  • Lead the HACCP and food safety requirements in your scope of work 
  • Review, update and or develop policies and procedures as may be required 
  • Interact with guests, gather feedback and handle concerns professionally 
  • Support the Executive Chef in delivering operational and service excellence within the department 
  • Support other properties in the Group as may be requested 
  • International exposure will be an added advantage 

Qualifications

  • Minimum 10 years cumulative work experience in Pastry & Bakery in 5-star hotels
  • A minimum of 5 years experience as Head of Pastry, Pastry Chef or Pastry Sous Chef in 5-star hotels
  • Demonstrable experience and skills in people leadership and staff performance management
  • Excellent guest experience and problem-solving skills
  • Articulate verbal and written communication skills
  • Strong Food Preparation, Cooking, presentation and General Culinary Skills
  • Ability to innovate and develop new pastry recipes
  • Attention to detail and a commitment to quality
  • Good understanding of health and safety regulations
  • Culinary degree or equivalent certification in pastry arts
